Dr. Lovedeep Kaur
Dr. Lovedeep Kaur is a Senior Research Officer in the School of Food and Advanced Technology at Massey University, and is currently leading an internationally recognised research programme focussed on meat microstructure, processing and in vitro digestion. In line with her research focus on development of novel protein structures with improved digestibility using novel processing technologies, she has developed laboratory models to mimic gastric and small intestine digestion of various foods. She has also been working on understanding the synergistic interactions of kiwifruit with food proteins. During her 19 years of research career, she had produced about 100 publications including two edited books, review articles, research papers, book chapters and conference proceedings. She has also been working closely with the New Zealand and global food industry.
